Couscous with Apricots for Tyler Florence Fridays

This week my recipe for Tyler Florence Fridays is a quick, easy and healthy side dish; Couscous with Apricots. from his Food 911 show (here). It also helps me multi-task as I added it for some color to my Middle Eastern plate for my Cook the Books entry, (to be posted very soon). This dish has more of a Moroccan flavor to it than a Jordanian one, as in the book but what the heck, it looks good, tastes good and takes only about 15 minutes to make.


Couscous with Apricots
Tyler Florence
(Makes 4-6 servings)

1 1/2 cups couscous
2 cups hot chicken stock
10 dried apricots, chopped
2 scallions, sliced thin, green parts only
1 orange, juiced
2 tablespoons extra-virgin olive oil
Kosher salt and freshly ground black pepper
2 tablespoons chopped fresh parsley leaves, for garnish

Put the couscous in a medium bowl; pour the hot stock over it and stir to combine. Cover and let sit for 10 to 15 minutes. Uncover and fluff with a fork. Add the apricots, scallions, and orange juice; drizzle with olive oil and season with salt and pepper. Toss gently to combine. Garnish with chopped parsley.


Notes/Results: I used a whole wheat couscous and added just one tablespoon of olive oil but otherwise, I made this recipe as written. It's quick, easy and delicious. It has a nice bright flavor from the orange juice and a little sweetness from the chopped apricots. A great, light, simple side dish for any occasion. I will make it again, maybe adding some pistachios for a bit of crunch.

  1. I've only recently started adding in dried fruit to my starchy side dishes but have never tried dried apricots. Looks good!

  3. I have had my eye on this recipe, glad you liked it, and great suggestion on the pistachios, sounds like they would go great in this. Although with the pistachio kick I've been on lately I'm starting to think they go great with everything, ha!

  5. Parsley is one of our fave herbs...second only to garlic! Love the color and extra flavor punch it gives to anything. It has to be divine with a bit of apricot.

  16. That looks liked one fine side dish. I think adding a handful of sauteed pine nuts would gild this lily of recipe quite nicely. Thanks!
