Carrot-Tangerine-Orange Juice: A Sunny "Simple Saturday Sipper"

Lightly sweet, refreshing and oh-so-good, this freshly juiced blend of carrot, tangerine, and orange is the perfect healthy pick-me-up when you need a little sunshine in your life. Juicing tangerines for a sorbet for a cookbook review, I had some extra juice and decided to keep with the sunny orange hue and toss in some carrots and an orange. Blending it with some ice made it cold, frothy and a perfect treat for a long afternoon.


With the carotenoids (antioxidants including beta carotene and lutein), vitamin A and other nutrients in the carrots, and of course the vitamin C, phytochemicals, and flavonoids in the citrus it is an immunity building, cancer-fighting blend and sweet enough that no sweetener is needed.


Carrot-Tangerine Orange Juice

(Makes 2 Servings)

2 tangerines
1 large orange
2 large carrots
1 cup ice

Juice the tangerines, orange and carrots in a juicer. Place juice in blender, add a cup of ice and blend until smooth and frothy. Pour into two glasses and enjoy.


Notes/Results: Delicious! A blend of liquid sunshine. If you don't have a juicer, you can squeeze the orange and tangerine juice into a blender, add the carrots and blend for several minutes, until it is as smooth as possible, then strain reserving juice and discarding solids. Rinse blender and return juice blend to the blender, add ice and blend until frothy. (A few extra steps, but worth it!) A little pineapple juice is a nice touch too.
