Berry Good Rice Milk Smoothie

(Makes 2 1 & 1/2 cup servings)
1 cup ice (plus extra if needed)
1 cup Vanilla Rice Milk (plus extra if needed)
1 tsp vanilla extract

1 cup frozen strawberries
1 cup frozen blackberries
Put ice, rice milk and vanilla in blender. Pulse blender for 30 seconds to break up ice and then blend on high for approximately 45 seconds--until mixture reaches a slushy consistency. Add strawberries and blackberries and pulse for 30 seconds to chop berries, then blend on high for another 45 seconds. If milkshake is too thin add more ice, or if it is too thick, add more rice milk to get it to your desired texture.

Notes/Results: Fruity, refreshing and good--this smoothie hit the spot for an afternoon slump. Strawberries are high in vitamin C, fiber and antioxidants and blackberries have similar qualities, plus they are good sources of vitamins E and K. With the rice milk it's about 129 calories in a 12 oz serving or 86 calories for a cup, so it's good on the waistline too. Purple goodness in a cup!

ReplyDeleteSmoothies are my favorite power snack, without any guilt. My husband loves berries, so he tends to have a cow if I whirl them up to drink. I use soy milk, but rice milk would be a great alternative. Beautiful shots and here's to your health.

ReplyDeleteI have yet to try rice milk, but I'm always tempted. Berries on the other hand are a different story. :) I just got another bag of frozen raspberries from my parent's over Easter and can't wait to put them to use.
