My 5 Favorite Soups of 2021 for Souper (Soup, Salad & Sammie) Sundays

I meant to do this roundup post last Sunday and then lost power for almost 5 hours and never got it posted during the week. I also never made soup. Yep, still in my no-cooking funk.

But anyway, here are my 5 favorite soups of last year and a round up of the past few weeks from friends in the Souper Sunday kitchen. If you wanted to share a soup, salad or sandwich last week or this past week, feel free to share it below and I'll recap it next week.

Chickpea Curry & Rice Soup, created by me back in August to fulfill a craving and a delicious one-pot meal.

Easy Tortellini Alfredo Soup is mostly from the pantry but with homemade Alfedo sauce and really hit the spot.

This Mini Wonton Vegetable Soup is also easy and so good. I keep thinking about it!

I loved this Ethiopian Lentil Stew (Misr Wot) and it was worth the berbere (Ethiopian Spice Mix) and nit'r qibe (spiced butter) I bought online to make it.

I tinkered a bit with Mark Bittman's Garlic Fideo Soup and ended up loving this simple hug in a bowl.

I did make other very delicious soups during the year, even in and around my cooking/blogging funk, but these are the ones I think most about.

Let's see who has been waiting in the Souper Sundays kitchen these past couple of weeks.

Tina of Squirrel Head Manor made Beef Vegetable Soup and said "This soup doesn't require a recipe or measurements. I use a couple of marrow bones and add beef, fresh veggies such as tomatoes, carrots, onions, corn, green beans, zucchini and potatoes.  My mom added cabbage and lima beans but that's not happening this time :-)"

Melynda of Scratch Made Food shared this Winter Pea Salad Plate with Tomatoes and Cashews saying it "is a fresh breath of air, for winter salads! This delicious salad calls for frozen peas, which is perfect, because good quality frozen peas are available year-round, but always a favorite in winter!"

Melynda also made Lentil and Mushroom Soup with Kale and Bacon and says, "I love mushrooms in lentil soup, so I use as many as possible. And of course some kale, there are very few pots of soup made in this kitchen where kale is not added. The secret about using kale is to cut it small if you want it to get eaten without question. I no longer consider this sneaky, I consider it good nutrition. As it turns out kale is really good for you, but hard to like in the same way people like spinach..."

Radha of The Magical Ingredients for a Wholesome Life From the Heart of My Home brought healthy Zero Oil Veggie and Millet Noodle Soup and said, "This is a very healthy soup perfect for the weather. The brothy soup filled with veggies and some millet noodles makes a wholesome and nutritious soup. Did I tell you that this is zero oil soup? Yes, no oil to butter! zero fat soup! This soup is vegan too!"

Thank you Tina, Melynda and Radha for joining me!

Five Bowls of Chilis I Still Think About for Souper (Soup, Salad & Sammie) Sundays

It's still in the mid 80s (Fahrenheit) here mostly, but today is a bit cooler and rainy, and it puts me in mind of a big bowl of chili. So here's a roundup of some great chilis I have enjoyed from out I Heart Cooking Clubs featured chefs.

First up is the Espresso Black Bean Chili that I adapted from How to Cook Everything Vegetarian by Mark Bittman. Rich and well-balanced, the coffee flavor comes through but doesn't overpower

Another on the non-traditional but delicious side is Pierce Street Vegetarian Chili by Heidi Swanson. Lentils. chickpeas, bulguer, and barley make it hearty and satisfying.

Not a bean fan? Giada's Vegetarian Chili Verde is full of veggies and flavor and perfect for Fall.

An easy and more traditional chili is Mark Bittman's Simple Chili from Scratch. I jazzed it up a bit and used plant-based crumbles to make it meat-free.

Another more traditional chili that I made meat-free was Rick Bayless' "The World's Greatest Chili" adapted from Rick & Lanie's Excellent Kitchen Adventures. While "World's Best" is maybe a bit strong, it was very good.

For other great chili recipes just look at the tag on my sidebar.

I'm linking up this post up at I Heart Cooking Clubs where this week's theme is Warming Soups and Stews.

Now let's take a look into the Souper Sundays kitchen:

Tina of Squirrel Head Manor tried a soup from Tieghan Gerard, saying, "The theme this week at I Heart Cooking Clubs is warming soups and stews. There were a few on my menu planning such as gumbo and a chicken gnocchi soup but I decided on the Broccoli Cheddar with Seasoned Pretzels. ... After making this I know I will, more than likely, return to a different broccoli cheddar soup recipe as this one didn’t turn out as I hoped."

Kim of Stirring the Pot said, "I've been wanting to make Tieghan's Healthier Creamy Tortellini Vegetable Soup for ages. A creamy soup with cheesy tortellini that is loaded with veggies and still somewhat healthy? Yes, please! It just ticks all the boxes for me! ... This is my FAVORITE Half-Baked Harvest recipe yet and will most likely be one of my favorite recipes of the year! If you're in need of comfort or warming up, you seriously need to make this! "

Melynda of Scratch Made Food shared two recipes this week. First up, a tasty soup, She says, "Terrific Turkey Soup with Lima Beans and Barley is our favorite after Thanksgiving soup! It is chock full of all the good things one needs on a cold winter's day. Rich bone broth, lots of veggies, and of course chunks of that delicious turkey from the day before..."

Next is a salad. Melynda says, "Kale Apple and Carrot Slaw, is the perfect salad to introduce a raw kale to the family! Plus this salad is so good, you don't need to be worried about anyone NOT liking it! Kale Apple and Carrot Slaw, is not too sweet, and everyone I know loves it...my guess is, so will you."

Thank you Tina Kim and Melynda for joining me this week!

6 Restorative Miso Soups for Souper (Soup, Salad, & Sammie) Sundays

It's becoming a habit to laze through Sundays versus make a new soup. I expect I will be out of my funk soon and back to regular soup making but until then, here are some favorite miso soups to keep you company.

I make miso soup frequently on weeknights--whatever leftover veggie I have available, sometimes just the broth when I feel in need or restoration. Sometimes things get a little fancier and here are soups that prove that

Mark Bittman's Simple Miso Soup with Tofu, Mushroom and Noodles is nourishing, satisfying and delicious:

Heidi Swanson's Turmeric Miso Soup with Tofu and Chunky Vegetables is bright, tasty, and perfect for fall:

If you are wanting a tofu alternative, Nigel Slater's Miso Soup with Prawns and Green Tea Noodles fits the bill, and you could replace the shrimp with chicken too:

And Donna Hay's Udon Noodles with Tofu & Asparagus in Miso Broth is simple, mellow, and comforting.

And finally, my own Simple Miso Soup with Chickpeas and Pasta is not at all traditional but quick and easy when you need a mock chicken soup:

You can't go wrong with any of these soups plus the many others that use miso on the blog!

Since miso soups are a great way to ease or jump into fall, I am linking up with I Heart Cooking Clubs and our Leaping Into Autumn theme this week.

There's no one in the Souper Sundays kitchen this week. Others are feel soup lazy too. ;-) But consider joining in next week or whenever you have a new soup, salad or sandwich recipe to share.

The details for joining in are below:

Five Potato Soups That I Love for Souper (Soup, Salad, & Sammie) Sundays

I won't bore you with why I didn't make soup today--although a lack of sleep and the fact I took a two hour nap at 10:00 AM played a roll.  I even had a soup lurking around in my head to make, a variation of potato soup and I am planning on making it soon. Until then, here are some fabulous potato soups from our I Heart Cooking Clubs featured chefs to enjoy!

Jamie Oliver's Baked Potato Soup is simple, rich and satisfying and great with blue cheese sprinkled on top:

And you can't go wrong with Ruth Reichl's Hot Vegetarian Vichyssoise (I made it vegan):

All of these are great potato soups and you can find manymore by searching for "potato soup" on my blog. Since it's a favorite comfort food I make variations of it a lot!

Linking up with IHCC where it's September Potluck this week.

Now let's check into the Souper Sundays kitchen and see who is here.

Tina of Squirrel Head Manor shared Nigella Lawson's recipe for Chicken Cosima, a stew, saying, "This one is highly recommended. A healthy dish which is easy to prepare and easy on the budget. If you like sweet potatoes and chickpeas I think you will enjoy this recipe. Grab a spoon and ladle up a serving or two!"

Judee of Gluten Free A-Z Blog brought Baby Spinach and Kale Soup--Oil Free and said, "My first fall soup of the season is simple, green and soothing. It's easy to make in either the Instant Pot or on the stove top, and it is nourishing, filling, and tasty. I used a frozen spinach and kale mixture (from BJ's), but it I've seen similar fresh mixtures in the produce isle for baby spinach and baby kale. Frozen or fresh greens will work perfectly in this recipe."

Thanks to Tina and Judy for joining me this week!

6 Favorite Corn Chowders to Hold on to Summer for Souper (Soup, Salad & Sammie) Sundays

The end of summer is approaching, if not seen through the weather, at least seen on the calendar pages. Chowder, especially corn chowder is a great way to hold on to summer, while welcoming the fall.

Here are 6 great corn chowders to enjoy. I have countless chowders and corn chowders on the blog so I whittled down the list by choosing ones by our I Heart Cooking Clubs featured chefs and keeping them vegetarian.

I added hominy to Mark Bittman's Basic Corn Chowder and it was a great addition to the texture of this simple classic:

Yotam Ottolenghi's Sweet Corn Chowder with Spiced Butter is elevated with the sexy spiced butter:

Another great Mark Bittman recipe is this hearty Corn-and-Cheddar Chowder:

Jacques Pépin's Corn and Hominy Chowder is quick, colorful and tasty:

Finally Donna Hay's Cauliflower and Corn Chowder is unique and delicious:

All of these corn chowders were simple and delicious and will help you extend that summer vibe so I am linking this post up at IHCC's Holding On To Summer post.

Now let's check into the Souper Sundays kitchen and see who is here.

Judee of Gluten Free A-Z Blog shared this pretty and refreshing Fresh Corn and Blueberry Salad. She says, "Got corn on the cob? Talk about an unusual yet tasty salad! Sweet corn and sweet blueberries mix beautifully in this colorful summer salad. ... It is simple to make, gluten-free, oil-free, parve, and vegan."

Tina of Squirrel Head Manor brings a Hummus Sandwich this week saying, "I am a big fan of hummus so I thought, why not make a sandwich with it.  This is a spinach artichoke and sun dried tomato blend. ... Spread this on toast with sliced tomatoes. A fast and healthy lunch alternative."

And Kim of Stirring the Pot shared Curtis Stone's Favorite (& Healthy) Potato Salad saying, "When you pour the broth over the potatoes and stir, the potatoes become flavorful and creamy all on their own. This means it is only necessary to use a very small amount of mayo. I have to say, I was really impressed with this method and couldn't believe how creamy and "classic" this potato salad looked and tasted."

Thanks to Judee, Tina and Kim for joining me this week!
