Chunky Corn Soup with Cilantro & Smoked Spanish Paprika for Souper (Soup, Salad & Sammie) Sundays


I bought fresh, sweet corn at the farmer's market and wanted to make a simple cold soup that really highlighted the sweetness of the corn. This Chunky Corn Soup with Cilantro and Smoked Spanish Paprika is from Vegetable Harvest by Patricia Wells and has just five ingredients--can't beat that!


Chunky Corn Soup with Cilantro and Smoked Spanish Paprika
Vegetable Harvest, Patricia Wells
(Serves 4-6)

3 ears fresh corn, shucked
6 cups 1% milk
2 teaspoons fine sea salt
1/4 fresh cilantro leaves (for garnish)
about 1 teaspoon hot smoked Spanish pimentón de la Vera

With a sharp knife scrape / slice the kernels off the corn cobs. Be sure to catch any milky liquid that is released while you do this.  Place the kernels and the cobs in a saucepan or skillet large enough to hold them in a single layer. Add the milk and salt. Cover and bring to a simmer over low heat. Cook at a bare simmer for 45 minutes.

Remove the corn cobs, and put the milk and corn mixture in a blender and puree until the corn is slightly broken up but still maintains some texture. Serve warm or chilled garnished with the pimentón and cilantro.


Notes/Results: Creamy and good, the sweetness of the corn really stands out. The Spanish paprika really adds a nice burst of smokey spice that plays nicely against that sweetness. Although I had intended to chill it and have it cold, it looked so good I had some warm, then chilled it and tried it again for dinner as the first course for some fish tacos. I think it works well both ways but I think I have a slight preference for the warm version. A keeper recipe, both simple and flavorful.

Chaya from both Chaya's Comfy Cook Blog and Sweet and Savory Says It All found she likes the pairing of corn and sweet potatoes, as in this hearty Golden Soup. Chaya says that the recipe calls for cream but she "used a corn soup instead and it was thick and creamy." She calls the soup "just right."



Join me in welcoming Wizze from Breakfast, Lunch, Dinner & Punch who joins us from The Caribbean. She made some "A-Maizing" Green Corn Dumplings, from some fresh raw or "green" corn. The dumplings went into a traditional Caribbean Soup called Boilin. Wizze says it is a hearty soup. In her version she just has the dumplings and fish in the soup with a seasoned coconut milk broth, but she says islanders usually put in a mix of other local root vegetables. Welcome Wizze!



Lissaloo from One Step at a Time is back this week with a pretty in pink, Spiced Rhubarb Soup, She says "This is my first attempt at a chilled fruit soup and it was just lovely." Spiced with cinnamon and cloves and topped with yogurt, Lissaloo says, "This was delicious, we really enjoyed it."



Some cold weather this week had Reeni from Cinnamon & Spice craving some soup so she "rummaged around in her fridge" and threw together a Fresh Corn & Fish Chowder. She says, "The fresh corn was the star, it turned the chowder yellow, and so incredibly sweet with it's sunshine-colored milk. The broth was rich, creamy and packed with herb flavors. The tender hunks of fish were flaky and delicious."



Since her son got new rubber bands for his braces, he wanted soup to eat so Ulrike from Küchenlatein chose Cauliflower Soup with Beluga Lentils & Chives. She cooked the lentils with some carrots, leeks and celeriac, then puréed cooked cauliflower with milk and vegetable stock. She topped the soup with some cream and lentils and then garnished it with chives and nutmeg. Ulrike says they all enjoyed it, her son without the lentils of course!



Natashya from Living in the Kitchen with Puppies says despite the summer season, she was craving soup so she made this luscious Cream of Cauliflower Soup with Chorizo. Natashya says, "This soup is simple, quick and satisfying - not to mention fairly good for you! The addition of chorizo gives a delicious treasure at the bottom of the bowl, a rich and savoury bite to complement the creamy soup."

  17. Thanks everyone for the cup & saucer comments. As you might be able to tell, I have a blue and white fetish ;-). These were from a clearance sale at a furniture store and I love them.

    Arlene--I just treated myself to two lights and a backdrop board because the lighting in my house is so bad in the evening hours. I am just playing around with it and learning.
