Happy Valentine's Day--Mom's "Fantasy Fudge"

I have been eating and posting some pretty healthy recipes for the past several weeks but for Valentine's Day, I am taking a break to bring you some indulgent, in no way good for you, chocolate love made by Mom. Not making it home for Christmas this year, I missed what is my favorite holiday tradition food; Mom's Fantasy Fudge. I am sure the people at Kraft would object to me calling it my Mom's, when the recipe has been appearing on the back of their marshmallow creme jar for decades, but my Mom makes it better. By replacing half the semi-sweet chocolate with milk chocolate, it is sweet and creamy and something I have trouble resisting. Mom made a batch while I was visiting just for me. (Although we gave most of it away--after all a girl has to have some restraint!) Her changes/notes are in red below.


Fantasy Fudge (Mom's Version)
Adapted from Kraft Foods 
(Makes 3 lbs)

3 cups sugar
3/4 cup margarine
1 can (5 oz) evaporated milk
1 pkg. (12 oz) semisweet chocolate pieces (6 oz semisweet and 6 oz milk chocolate pieces)
1 jar (7 oz) marshmallow creme
1 cup chopped nuts (omit)
1 tsp. vanilla

Combine sugar, margarine and milk in heavy 2 to 3-quart saucepan. Bring to a full rolling boil, stirring constantly. (Mom melts her margarine first, then adds the sugar, salt and milk before bringing it to a boil)


Continue boiling 5 minutes over medium heat stirring occasionally to prevent scorching. Remove from heat.


Stir in chocolate pieces until melted. Add marshmallow creme, nuts and vanilla. Beat until well blended. (I like my fudge creamy so no nuts in mine!)


Pour into a greased 13-by-9-inch pan.


Cool at room temperature. Cut into squares.


Notes/Results: What can I say?  It is just delicious! Although some might argue that the milk chocolate is too sweet, to me that is the whole point of fudge. When the milk chocolate is combined with the semi-sweet, it makes a creamy delicious treat to indulge in once a year whether at Christmas or for Valentine's Day, or both--who am I to judge?!

  4. I love the Kraft fudge... we make it every Christmas. I don't know if I'm brave enough to start making batches during the rest of the year though, could be a slippery slope! :
